Caraway meatballs with cabbage salad

Get the kids engaged with these flavorful beef meatballs, spiced with caraway for an exciting twist.
Ingredients:
  • 425g lean beef mince
  • 25g (1/4 cup) dried (packaged) breadcrumbs
  • 1 egg, lightly whisked
  • 2 tsp caraway seeds
  • Salt & freshly ground black pepper
  • 57.20 gm yellowbox honey
  • 1/4 (about 250g) red cabbage, hard core removed, shredded
  • 1/4 (about 250g) green cabbage, hard core removed, shredded
  • 62.50 ml chopped fresh chives
  • 18.40 gm coarsely chopped walnut halves
Instructions:
  • In a large bowl, mix together the mince, breadcrumbs, egg, and caraway seeds. Season with salt and pepper. Divide the mixture into 16 equal portions and shape each into a ball.
  • Warm oil in a non-stick pan over medium-high heat. Cook the meatballs for 7-8 minutes, turning occasionally until fully cooked. Stir in honey until meatballs are coated evenly.
  • Steam cabbage until tender, then transfer to a bowl. Mix in chives and walnuts. Serve on plates, top with meatballs, and drizzle with pan juices.
