Ingredients:
  • 165.00 gm warm water
  • 1 tsp dried yeast
  • 13.40 gm golden syrup
  • 125.00 ml rye flour, plus extra for dusting
  • 125.00 ml plain wholemeal flour
  • 125.00 ml plain bread flour
  • 1 tsp finely grated orange rind
  • 2.40 gm sea salt
  • 1 1/2 tsp caraway seeds
  • 36.40 gm extra virgin olive oil
Instructions:
  • In a medium jug, combine warm water, yeast, and golden syrup. Stir well and let it sit in a warm place for 10 minutes until frothy.
  • In a large bowl, mix flours, orange rind, salt, and caraway seeds. Create a well in the center and pour in the yeast mixture and oil. Stir until dough forms. Use an electric mixer with a dough hook to knead for 5 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with greased plastic wrap, and let it rise in a warm place for 1 hour 30 minutes until doubled in size.
  • Preheat the oven to 200C/180C fan-forced. Grease and lightly flour a large baking tray. Punch down the dough and place it on a lightly floured surface. Shape it into a 15cm x 24cm rectangle. Cut into 12 x 15cm long strips starting from the edge closest to you. Twist the strips and arrange them 5cm apart on the tray. Season with salt and pepper and let them rest in a warm place for 30 minutes.
  • Bake for 15 minutes or until golden brown and the bread sounds hollow when tapped. Allow to cool on the tray before serving warm or cold.
