30-Minute Meal: Succulent pork chops with peach salsa served over rice.
Ingredients:
  • 2 tsp caraway seeds
  • 4 (180g each) pork loin chops
  • 3 peaches, sliced
  • 1 long red chilli, finely chopped
  • 1 small red onion, finely chopped
  • 1 tsp ginger, grated fresh
  • 1 Lebanese cucumber, seeded, chopped
  • 3 tsp mint, finely chopped
  • 42.00 gm lime juice
  • Steamed rice, to serve
Instructions:
  • In a bowl, mix 1 tablespoon of oil with caraway seeds and season with salt and pepper. Rub the pork with the caraway mixture. Heat a large frying pan over medium-high heat and cook the pork for 4 minutes on each side or until just cooked through.
  • In a bowl, mix together peaches, chili, onion, ginger, cucumber, mint, lime juice, and remaining oil. Season with salt and pepper to taste.
  • Present a delectable dish of pork and rice, elegantly garnished with flavorful salsa on top.
