Indulge in a Bavarian-inspired slow-cooker beef roast with sauerkraut, caraway seed, and stone-ground mustard for a flavorful meal with minimal prep.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3-pound beef boneless tip roast, trimmed of fat
  • 2 teaspoons caraway seed
  • 1 bag (16 ounces) frozen small whole onions
  • 1 can (16 ounces) Bavarian-style sauerkraut, undrained
  • 1/2 cup dark beer or Progresso™ beef flavored broth
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 tablespoon stone-ground mustard
Instructions:
  • In a large skillet, heat oil over medium-high heat. Sear beef for approximately 5 minutes until browned on all sides. Season with caraway seed and salt to enhance flavor.
  • Add the beef to the 5- to 6-quart slow cooker, then surround it with onions, sauerkraut, and 1/4 cup of beer.
  • Simmer covered on Low heat for 6 to 8 hours.
  • After removing the beef from the cooker, keep it covered to preserve its warmth. Combine flour, 1/4 cup beer, and mustard in a small bowl; add this mixture gradually to the cooking juices in the cooker. Turn the heat setting to High, cover, and cook for 15 to 30 minutes until slightly thickened. Serve the beef with the flavorful juices.
