Creamy and indulgent pasta carbonara, a controversial twist on the classic with added richness from cream. Made with pancetta, eggs, and parmesan, perfect for any pasta lover.
Ingredients:
  • 9.20 gm olive oil
  • 200g sliced pancetta, roughly chopped
  • 3 garlic cloves, crushed
  • 2 egg yolks (at room temperature)
  • 2 eggs (at room temperature)
  • 126.25 gm thickened cream
  • 75g parmesan cheese, finely grated
Instructions:
  • In a large non-stick frying pan over medium heat, sauté pancetta and garlic in oil until pancetta turns crispy, about 5 minutes. Pat dry on paper towel.
  • In a bowl, combine egg yolks, eggs, cream, and three-quarters of the parmesan. Season generously with salt and pepper.
  • Combine the egg mixture and pancetta mixture with the pasta. Season generously with salt and pepper. Gently toss over low heat until everything is fully mixed. Finish by serving with the remaining parmesan.
