Delicious oat and coconut slice for a perfect energy pick-me-up.
Ingredients:
  • 100.00 gm rolled oats
  • 250.00 ml plain flour, sifted
  • 75.00 gm self-raising flour, sifted
  • 118.80 gm brown sugar
  • 63.75 gm desiccated coconut
  • 56.10 gm sultanas
  • 125g butter, chopped
  • 83.75 gm golden syrup
  • 1 egg, lightly whisked
  • 375.00 ml icing mixture
  • 1/2 tsp ground cardamom
  • 1 tsp finely grated orange rind
  • 1 to 21.00 gm orange juice
Instructions:
  • Preheat your oven to 180°C and prepare an 18 x 28cm base slab pan by greasing and lining it.
  • In a large bowl, mix together oats, flours, sugar, coconut, sultanas, and cardamom.
  • In a small saucepan, melt butter and golden syrup over medium-low heat. Combine the melted butter mixture and egg with the oats until well mixed. Spread the mixture into the pan and bake for 20 to 25 minutes. Let it cool completely before adding icing.
  • For the icing, combine icing mixture, cardamom, and orange rind in a medium bowl. Gradually mix in orange juice until smooth and spreadable. Spread over slice and let it set before cutting.
