Cardamom infused mandarins

Speedy poached mandarins: a deliciously fragrant treat.
Ingredients:
  • 500ml (2 cups) water
  • 225g (1 cup) sugar
  • 1/4 tsp cardamom seeds (MasterFoods brand)
  • 1 cinnamon stick, broken in half
  • 6 (about 160g each) seedless mandarins, segmented
  • 130g (1/2 cup) natural yoghurt, to serve
Instructions:
  • In a large saucepan, combine water, sugar, cardamom seeds, and cinnamon. Stir over low heat until the sugar dissolves. Increase the heat to high and boil, uncovered, for 5 minutes until the syrup reduces and thickens slightly.
  • Lower the heat to medium-low and gently stir in the mandarins. Simmer uncovered for 3 minutes. Turn off the heat and let the mandarins steep in the syrup for 5 minutes to complete the poaching process.
  • Divide the segmented mandarins and a generous amount of the sweet syrup among the serving bowls. Top each with a dollop of creamy yogurt.
