Elevate your custard with exotic and aromatic cardamom.
Ingredients:
  • 300ml thin cream
  • 250ml (1 cup) milk
  • 3 tsp cardamom seeds
  • 6 free-range egg yolks
  • 60g (1/4 cup) caster sugar
  • 2.50 gm cornflour
Instructions:
  • In a medium heavy-based saucepan, gently warm the cream, milk, and cardamom seeds over low heat, stirring occasionally, until it just starts to boil, about 30 minutes. Strain the mixture through a fine sieve into a heatproof jug, discarding the seeds.
  • In a large bowl, use electric beaters to whip the egg yolks, sugar, and cornflour until light and foamy. Then, add the cream mixture and whisk until fully combined.
  • Make sure the saucepan is clean and dry. Add the cream mixture to the pan and cook on medium-low heat, stirring with a wooden spoon for 15-18 minutes until the custard thickens and coats the back of the spoon. Strain the custard through a fine sieve into a heatproof jug. Serve hot with the sweet roasted apples from the related recipe.
