Light and refreshing orange dessert, ideal for a guilt-free treat after dinner.
Ingredients:
  • 35g (1/3 cup) flaked almonds
  • 5 oranges
  • 40.00 gm caster sugar
  • 1/2 tsp ground cardamom
  • 1 150g carton reduced-fat natural yoghurt LC1 (Nestle brand)
Instructions:
  • Toast almonds in a large non-stick pan over medium heat, stirring frequently, until light golden, about 1-2 minutes. Transfer to a plate.
  • Juice 1 orange and set aside 60ml (1/4 cup) of the juice. Peel the remaining oranges with a small sharp knife, removing the rind and white pith. Slice the oranges into 1cm-thick slices.
  • Mix the orange juice, sugar, and cardamom in a bowl.
  • In a frying pan, stir over low heat until the sugar dissolves. Increase heat to high, bring to a boil, and cook uncovered for 30-60 seconds until the mixture thickens slightly. Remove from heat and coat orange slices in the syrup.
  • Arrange the orange slices on plates, generously drizzle with syrup, sprinkle with toasted almonds, and serve with yogurt.
