Create a tropical island dish with local ingredients for an authentic Caribbean experience!
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup brown sugar
  • 2 large eggs
  • 3 medium bananas
  • 1 tablespoon rum extract
  • 1 cup shredded coconut
  • 0.5 cup chopped dried pineapple
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with paper liners.
  • In a bowl, sift together flour, baking soda, baking powder, and salt; set aside. In a separate large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well, then add bananas and rum extract. Stir in flour mixture, then fold in coconut and pineapple just enough to distribute evenly. Divide batter among muffin cups.
  • Bake until a toothpick comes out clean, 20 to 25 minutes in a preheated oven.
