Try this delicious Caribbean-inspired chicken and rice recipe using Progresso® broth for a fulfilling dinner.
Ingredients:
  • 4 boneless, skinless chicken breast halves (about 1 pound)
  • 1 large onion, coarsely chopped (1 cup)
  • 2 cups Progresso™ chicken broth (from 32 oz carton)
  • 1 cup uncooked regular long grain rice
  • 1 medium red bell pepper, chopped (1 cup)
  • 1/4 teaspoon saffron threads, crushed
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup frozen green peas
Instructions:
  • Preheat oven to 400°F. Grease an ovenproof Dutch oven or 12-inch skillet with cooking spray and heat over medium-high heat. Sear chicken in the Dutch oven for 5 minutes, turning once, until browned. Then, transfer chicken out of the Dutch oven.
  • Sauté onions in a Dutch oven over medium heat for 1 minute, stirring frequently. Mix in broth, rice, bell pepper, saffron, and red pepper. Bring to a boil, then add chicken back to the Dutch oven.
  • Bake covered for 25 minutes, then stir in the peas. Continue baking for about 5 minutes until the rice is tender, the liquid is absorbed, and the chicken is fully cooked through.
