Sauté seasoned chicken in a skillet for a taste of tropical paradise at home!
Ingredients:
  • 2 pounds boneless skinless chicken breast halves, cut into 1/2-inch strips
  • 1/4 cup blackened seasoning blend
  • 8 cups bite-size pieces mixed salad greens
  • 3 cups peeled and diced fresh peaches
  • 1 cup sliced red onion
  • 1 medium red bell pepper, chopped
  • 1 1/3 cups fruit-flavored vinaigrette
Instructions:
  • Add the chicken to a sturdy resealable plastic bag. Sprinkle the seasoning blend over the chicken, then seal the bag and shake it well until the chicken is fully coated.
  • In a large skillet, heat oil over medium-high heat. Cook chicken for 10 to 12 minutes, stirring occasionally, until it's no longer pink in the center. Transfer the chicken to a paper towel-lined plate to drain.
  • Combine the salad greens, peaches, onion, and bell pepper in a large bowl. Serve the mixture evenly onto 8 plates. Add chicken on top and drizzle with vinaigrette.
