Caribbean Crunch Squash

Elevate your Caribbean meal with baked peach coconut ginger spiced squash for a unique and flavorful side dish!
Ingredients:
  • 1 buttercup squash (2 to 2 1/2 lb)
  • 2 tablespoons butter or margarine, melted
  • 2 tablespoons peach or apricot preserves
  • 2 tablespoons graham cracker crumbs
  • 2 tablespoons shredded coconut
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon pepper
Instructions:
  • Preheat the oven to 350°F. Cut the squash into quarters, then remove the seeds and fibers. Place the squash, cut sides up, in a 13x9-inch pan without greasing.
  • Combine butter and preserves in a small bowl. Spread half of the preserves mixture over the cut sides of the squash pieces. In another small bowl, mix the remaining ingredients and sprinkle over the squash. Finish by drizzling the remaining preserves mixture over the squash.
  • Bake without a cover for 45 to 60 minutes, or until soft and tender.
