Marinated skirt steak grilled to perfection in a cilantro-beer sauce. Served with a side of drunken beans and corn tortillas.
Ingredients:
  • 0.5 cup dark Mexican beer
  • 0.25 cup avocado oil
  • 0.5 white onion, cut into large wedges
  • 1 cup fresh cilantro leaves
  • 2 pounds beef skirt steak
Instructions:
  • In a blender, mix beer, oil, onion, cilantro, salt, and pepper until a smooth cilantro marinade forms.
  • Place the steak in a spacious resealable plastic bag and generously pour the flavorful cilantro marinade over it. Seal the bag securely and give it a good shake to ensure the meat is completely coated. Refrigerate for a minimum of 8 hours or overnight for optimal flavor infusion.
  • Preheat an outdoor grill until it reaches medium-high heat. Lightly oil the grate with avocado oil. Grill the meat for approximately 3 minutes on each side for a perfect medium-rare finish.
