Elevate your fries with Mexican flair: crisp bacon, spicy beef, gooey cheese, fresh salsa, and creamy avocado.
Ingredients:
  • 200g sliced streaky bacon, thinly sliced
  • 2 cloves garlic, crushed
  • 500g lean beef mince
  • 35g pkt taco seasoning
  • 2.50 gm smoked paprika
  • 1kg bag frozen shoestring fries
  • 200g grated pizza cheese
  • 2 avocados, mashed
  • 200ml tub Creme Fraiche
  • Crispy Asian shallots, to serve
  • Hot sauce, to serve
  • 200g sweet solantra tomatoes, chopped
  • 1 small red onion, finely chopped
  • 1-2 green chillies, seeded, finely chopped
  • 1 lime, juiced
  • 1 bunch coriander, rinsed
Instructions:
  • 1. Preheat your oven to 220C (200C fan-forced) and line two large oven trays with baking paper. Place a plate with paper towel nearby. 2. In a non-stick frying pan over medium heat, add the bacon. Cook, stirring occasionally, for 3-5 minutes until the bacon is dark golden and crisp. 3. Transfer the crispy bacon to the paper-lined plate and set it aside.
  • Start by heating the oil in a pan. Then, add the garlic and minced meat, and cook over medium heat for 5-10 minutes until it browns, remember to break up any lumps with a wooden spoon. Save 1 teaspoon of taco seasoning for later and add the rest to the pan, cooking and stirring for another 1-2 minutes. Finally, take the pan off the heat.
  • Evenly lay out the fries on the trays. Generously coat them with oil spray. Sprinkle with taco seasoning and smoked paprika mixture. Season with salt and pepper. Bake the fries for 30-35 minutes until they are golden and crispy, tossing them halfway through cooking.
  • Prepare the salsa by mixing tomato, onion, chili, and half of the lime juice in a bowl. Stir in half of the chopped coriander, then season to taste.
  • To serve, portion out the fries onto individual plates, sprinkle with crispy bacon, then layer on the seasoned mince and a generous amount of melted cheese. Arrange the plates on a baking tray and bake at 200 C (180C fan-forced) for 5-10 minutes until the cheese is gooey and everything is warmed through.
  • Mix the rest of the lime juice with the mashed avocado. Layer the fries with salsa and avocado. Add a dollop of crème fraiche on top. Sprinkle with crispy shallots and extra coriander leaves. Serve with hot sauce on the side, if desired.
