Flavorful flank steak and veggies in a delicious breakfast burrito.
Ingredients:
  • 2 pounds beef skirt steak, cut into thin strips
  • 2 tablespoons carne asada seasoning
  • 1 tablespoon garlic powder
  • 1 tablespoon vegetable oil
  • 0.5 sweet onion, diced
  • 1 red bell pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and diced
  • 1 (14.5 ounce) can Hunt's® Diced Tomatoes, drained
  • 2 cups frozen diced potatoes
  • salt and pepper to taste
  • 3 tablespoons butter, divided
  • 6 eggs, whisked
  • 2 cups shredded Mexican cheese blend
  • 4 (12 inch) flour tortillas
Instructions:
  • In a mixing bowl, add beef slices. Sprinkle with asada seasoning and garlic powder, then toss to coat evenly. Allow to marinate for 5 minutes.
  • In a large, deep skillet over medium-high heat, heat oil. Add beef strips and cook until browned. Stir in bell pepper, onions, and jalapeno pepper. Add tomatoes and potatoes. Cook until potatoes are tender, about 5-8 minutes. Season with salt and pepper. Transfer to a bowl.
  • Melt 1 tablespoon of butter in the skillet. Add the eggs and stir occasionally until scrambled and set. Return the beef mixture to the skillet and cook until warmed through, about 2 minutes. Melt the remaining 2 tablespoons of butter in a small dish in the microwave.
  • Sprinkle shredded cheese evenly over the tortillas, then evenly distribute the beef and veggie mixture on top of the cheese. Fold the sides of the tortilla in, then roll it up. Brush the burrito with melted butter and place it folded side down in a pan until golden brown; flip and brown the other side. Ensure the burrito is heated through before serving.
