Decadent butter pecan cake combined with creamy cream cheese frosting, transformed into irresistible bars.
Ingredients:
  • 2 tablespoons butter
  • 1.5 cups pecan pieces
  • 1 teaspoon butter extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 6.5 cups confectioners' sugar
  • 11 ounces cream cheese, softened
  • 0.66666668653488 cup butter, softened
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoon almond extract
  • 1 tablespoon milk, or more as needed
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and butter up a 9x13-inch baking pan.
  • In a small, heavy skillet over medium heat, melt 2 tablespoons of butter. Add pecans and toast for about 4 minutes until fragrant. Remove from heat and allow to cool.
  • In a large bowl, mix together white sugar and 1 cup of butter until light and fluffy using an electric mixer. Add eggs one at a time, beating well after each addition. Stir in 2 teaspoons each of vanilla and butter extract.
  • In a bowl, mix flour, baking powder, and salt. Gradually add this mixture and milk to the creamed butter, beating until just combined. Gently fold in pecans and pour the batter into the prepared pan.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  • In a large bowl, mix confectioners' sugar, cream cheese, 2/3 cup butter, 1 1/2 teaspoons vanilla extract, and almond extract until smooth. Gradually add milk until frosting reaches a spreadable consistency.
  • Cut the hot cake in half and place one half in a large bowl. Mix in 1/4 of the frosting. Repeat with the other half, adding another 1/4 of the frosting. Spread the mixture back into the baking pan and press it flat with your fingers. Finally, evenly spread the remaining frosting over the cake mixture.
  • Chill until set, usually for about 3 to 4 hours. Then, slice into bars.
