Ingredients:
  • 300.00 gm self-raising flour
  • 90.00 gm brown sugar, firmly packed
  • 1.25 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • 250.00 ml grated carrot, lightly packed
  • 250.00 ml grated zucchini, lightly packed
  • 125.00 ml chopped pecans
  • 2 eggs, lightly beaten
  • 193.13 gm milk
  • 90g butter, melted
Instructions:
  • Preheat your oven to 180 degrees Celsius.
  • In a large bowl, gently sift together the flour, sugar, baking soda, and cinnamon. Stir in the grated carrot, zucchini, and chopped pecans until well combined.
  • Create a crater in the middle of the dry ingredients. Incorporate lightly beaten eggs, milk, and butter until just combined. Transfer the mixture into muffin tins.
  • Bake in oven for about 20 minutes until golden brown.
