Spiced zucchini and carrot muffins filled with raisins and walnuts for a deliciously moist and textured treat.
Ingredients:
  • 1 cup butter
  • 3 eggs
  • 2 cups grated zucchini
  • 1 cup grated carrots
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons ground nutmeg
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) then prepare a muffin tin by greasing 21 cups or lining them with paper liners.
  • Using an electric mixer, blend together butter, sugar, and eggs until creamy in a large bowl. Mix in zucchini, carrots, and vanilla.
  • In a separate bowl, mix flour, nutmeg, cinnamon, salt, baking soda, and baking powder. Add this mixture to the butter mixture and combine. Fold in raisins and walnuts. Fill muffin cups with the batter.
  • Bake until a toothpick inserted in the center comes out clean, approximately 17 minutes in the preheated oven.
