Vibrant turmeric and coriander-spiced carrots and zucchini over fluffy couscous.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 1 medium onion, sliced
  • 2 garlic cloves, finely chopped
  • 4 medium carrots, sliced (2 cups)
  • 2 medium zucchini, sliced (4 cups)
  • 1 can (15 oz) Progresso™ chick peas (garbanzo beans), undrained
  • 1 teaspoon ground coriander
  • 1 teaspoon vegetable or chicken bouillon granules
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/8 teaspoon ground red pepper (cayenne)
  • 6 cups hot cooked couscous
Instructions:
  • In a 3-quart saucepan, heat oil over medium-high heat. Sauté onion and garlic for about 3 minutes, stirring occasionally, until onion is tender.
  • Add in all the remaining flavorful ingredients, excluding the couscous. Bring the mixture to a boil, then lower the heat. Cover and gently simmer for 12 to 15 minutes until the vegetables are perfectly crisp-tender. Serve the delicious mixture over a bed of couscous.
