Toddler-Friendly Carrot and Zucchini Muffins

Maple-sweetened whole wheat muffins packed with carrots and zucchini, perfect for little ones!
Ingredients:
  • cooking spray
  • 1 cup whole wheat flour
  • 0.5 cup rolled oats
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 pinch sea salt
  • 4 large eggs
  • 0.5 cup applesauce
  • 0.25 cup maple syrup
  • 1 cup grated carrot
  • 1 cup grated zucchini
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing it with cooking spray or lining it with paper liners.
  • Combine flour, oats, baking soda, baking powder, cinnamon, and salt in a large bowl and mix until well combined.
  • Combine eggs, applesauce, maple syrup, and vanilla in a separate bowl. Mix with flour mixture until well combined, then fold in carrots and zucchini. Spoon batter into muffin tins, filling each cup 2/3 full.
  • Bake until a toothpick comes out clean, for 15 to 20 minutes. Cool in the tin for 5 minutes, then transfer to a wire rack to completely cool for about 20 minutes before serving to hungry toddlers.
