FODMAP-friendly rice paper rolls - tasty and simple to prepare.
Ingredients:
  • 200g lean pork mince
  • 8 round (22cm-diameter) rice-paper sheets
  • 1 Lebanese cucumber, cut into matchstick
  • 1 carrot, peeled, cut into matchsticks
  • 60ml lime juice
  • 36.60 gm fish sauce
  • 16.00 gm brown sugar
Instructions:
  • Preheat a non-stick frying pan over high heat. Cook the pork, breaking it up with a wooden spoon, for 5 minutes until it changes color and is fully cooked.
  • Allow to cool completely for 15 minutes.
  • In a screw-top jar, shake lime juice, fish sauce, and sugar together until well mixed to create the dressing.
  • Submerge 1 rice-paper sheet in warm water for 30 seconds, ensuring it becomes soft without tearing.
  • Dry the pork on a paper towel. Lay it on a clean work surface. Put 1/8 of the pork in the middle of the sheet. Add some cucumber and carrot. Fold the ends in and roll tightly to seal the filling. Repeat to create 8 rice-paper rolls. Enjoy with the dipping sauce.
