Ingredients:
  • 350g cooked chicken, shredded
  • 40.00 ml chopped roasted peanuts
  • 40.00 ml chopped fresh coriander, optional
  • 1 carrot, grated
  • 10cm cucumber, grated
  • 4 spring onions, finely chopped
  • 375g pkt rice paper wrappers
  • 43.20 gm hoi sin sauce, plus extra to serve
Instructions:
  • In a medium bowl, mix together the chicken, peanuts, fresh coriander, carrot, cucumber, and spring onions. Keep aside.
  • Submerge rice paper wrappers in warm water until softened, then lay them flat on a board.
  • Brush each wrapper with a touch of hoi sin sauce and layer on some chicken mixture. Fold the sides inward and roll up tightly to seal the filling inside.
  • Enjoy with a side of additional hoi sin sauce for dipping. These are most delicious when freshly made.
