Sneak veggies into kids' diets with these delicious nuggets.
Ingredients:
  • 1 zucchini, finely grated (see note)
  • 500g chicken breast mince
  • 1 carrot, peeled, finely grated
  • 270g can corn kernels, drained, rinsed
  • 1 egg, lightly beaten
  • 125.00 ml dried breadcrumbs
  • olive oil cooking spray
  • potato wedges, to serve
Instructions:
  • Preheat the oven to 200C and prepare a large baking tray by lining it with baking paper.
  • Squeeze grated zucchini to remove excess liquid, then place it in a large bowl. Add mince, carrot, corn, egg, salt, and pepper. Mix everything together using your hands until well combined.
  • Spread breadcrumbs in a single layer on a large plate. Form tablespoons of the mixture into nugget shapes. Roll nuggets in breadcrumbs, making sure to shake off any extra crumbs. Transfer coated nuggets to the prepared tray.
  • Lightly spray the nuggets with oil and cook for 15 to 20 minutes, turning them halfway through until golden brown and cooked through. Serve alongside some crispy potato wedges.
