Delicious carrot cake muffins, ideal for breakfast or a snack. Sprinkle with cinnamon sugar for extra sweetness.
Ingredients:
  • 2 tablespoons applesauce, or more as needed
  • 1.5 teaspoons vanilla extract
  • 0.66666668653488 cup white sugar
  • 1 tablespoon baking powder
  • 1.5 teaspoons ground cinnamon
  • 1 cup shredded carrots
  • 6 tablespoons unsalted butter, melted and cooled
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prep a 12-cup muffin tin by greasing or lining with paper liners.
  • Combine milk, eggs, applesauce, and vanilla extract in one bowl and mix well. In a separate bowl, whisk flour, sugar, baking powder, cinnamon, and salt together. Add carrots to the flour mixture and stir. Gently fold in the milk mixture and butter until just combined. Spoon batter into muffin cups.
  • Bake in the preheated oven for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
