Easy no-bake energy bars with Medjool dates, pineapples, coconut, and carrot cake flavors. Simple to make using a food processor.
Ingredients:
  • 1 cup whole raw almonds
  • 10 pitted and chopped Medjool dates
  • 0.75 cup shredded carrots
  • 0.5 cup unsweetened shredded coconut
  • 0.25 cup dried pineapple pieces
  • 1 scoop vanilla protein powder
  • 1 tablespoon almond butter
  • 0.5 teaspoon coconut extract
  • 0.5 teaspoon almond extract
  • 0.5 teaspoon pumpkin pie spice
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Prepare a 9-inch square dish by lining it with parchment paper.
  • In a food processor fitted with the S blade, blend almonds, dates, carrots, coconut, pineapple pieces, protein powder, almond butter, coconut extract, almond extract, pumpkin pie spice, and cinnamon until a crumbly and moldable dough forms, pausing to scrape the sides as necessary.
  • Gently place the dough into the prepared dish and press it down to create a smooth, even layer.
  • Refrigerate or freeze for 1 to 2 hours. Slice into 12 bars and enjoy right away or wrap each bar for later.
