Healthy and decadent apple-carrot cake with creamy, cholesterol-free frosting.
Ingredients:
  • 3 cups freshly shredded carrots (4 to 5 large)
  • 1/2 cup raisins
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2 teaspoons ground cinnamon
  • 3/4 cup water
  • 3/4 cup fat-free egg product
  • 1/3 cup applesauce
  • 1/3 cup vegetable oil
  • 1 tub (12 oz) Betty Crocker™ Whipped Cream Cheese Frosting
  • 2 drops red food color
  • 1 drop yellow food color
  • 2 drops green food color
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pan) and generously spray the bottom of a 13x9-inch pan with baking spray that includes flour.
  • Combine carrots and raisins with 1/3 cup of cake mix in a medium bowl until coated. In a large bowl, blend the rest of the cake mix, cinnamon, water, egg product, applesauce, and oil with an electric mixer until smooth. Fold in the carrot mixture until fully incorporated. Transfer the batter to the pan and spread evenly.
  • Bake for 33 to 38 minutes until the center of the cake is firm or a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan on a cooling rack for at least 1 hour.
  • Set aside 1/2 cup of the frosting. Frost the top of the cake with the rest. Divide the reserved frosting between two small resealable plastic bags; one for red and yellow food colors and the other for green food color. Seal the bags and knead until the frosting is evenly colored.
  • Score the frosting on top of the cake to create 16 serving pieces in a 4 by 4 grid. Trim 1/8-inch off one bottom corner of a bag filled with orange frosting. Pipe a carrot shape diagonally onto each marked cake piece by squeezing a thick line of frosting and tapering it to a point. Trim a tiny corner off the bag with green frosting and add loops of green frosting to the tops of the carrots. Chill until frosting is firm, for approximately 30 minutes. Store the cake loosely covered in the refrigerator before serving.
