Delicious traditional soft cookie recipe handed down from grandmother.
Ingredients:
  • 0.75 cup white sugar
  • 0.75 cup shortening
  • 1 egg
  • 1 cup mashed cooked carrots, cooled
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest
  • 0.33333298563957 cup confectioners' sugar for decoration
Instructions:
  • Preheat oven to 350°F (175°C) to start baking!
  • Combine the sugar, shortening, and egg until creamy.
  • Combine the creamy mashed carrots, flour, baking powder, salt, and fragrant vanilla. Stir until fully incorporated.
  • Place the mixture on a well-greased cookie sheet and bake it for 15 minutes.
  • For the frosting, mix together fresh orange juice and the zest of one orange. Stir in confectioners' sugar until thickened. Drizzle over warm cookies.
