Delicious carrot cookies, perfect for little ones, flavored with cinnamon, nutmeg, and brown sugar. Great for a quick after-school treat!
Ingredients:
  • 0.5 cup butter
  • 1 cup packed brown sugar
  • 1 cup finely shredded carrots
  • 1 egg
  • 1.5 cups all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Cream together butter and brown sugar in a large bowl using an electric mixer until light and fluffy. Then mix in carrots and egg.
  • In a bowl, mix all-purpose flour, whole wheat flour, cinnamon, baking powder, nutmeg, and salt. Gradually stir into the carrot mixture, ensuring the dough is well blended after each addition.
  • Scoop dollops of dough onto a baking sheet, leaving 2 inches between each; gently press down with a damp fork to flatten.
  • Bake the cookies in the preheated oven until they turn golden and crisp, for approximately 15 minutes. Then, let them cool on wire racks for another 15 minutes.
