Cheesy veggie muffins: a delicious and nutritious after-school treat.
Ingredients:
  • 225g (1 1/2 cups) plain flour
  • 12.00 gm baking powder
  • 250.00 ml coarsely grated carrot
  • 250.00 ml coarsely grated zucchini
  • 80g (1 cup) coarsely grated cheddar
  • 2 eggs, lightly whisked
  • 125ml (1/2 cup) milk
  • 80ml (1/3 cup) olive oil
Instructions:
  • Preheat the oven to 180°C and line twelve 80ml (1/3-cup) capacity muffin pans with paper cases.
  • Combine the flour and baking powder in a large bowl by sifting. Mix in the carrot, zucchini, and half of the cheddar. Season with salt and pepper, then thoroughly combine.
  • In a bowl, whisk together egg, milk, and oil. Pour the egg mixture into the flour mixture and gently mix until just combined.
  • Evenly distribute the mixture into the prepared pans and sprinkle with the remaining cheddar. Bake until golden, about 25 minutes.
