Nutty granola bars with oats, quinoa, almonds, and flax seeds - perfect for satisfying hungry kids after school.
Ingredients:
  • 2.5 cups oats
  • 1.5 cups quinoa
  • 1 cup slivered almonds
  • 0.33333334326744 cup chia seeds
  • 1 cup crunchy peanut butter
  • 0.5 cup honey
  • 0.25 cup coconut oil, warmed
  • 0.5 cup flaxseed meal
  • 2 cups dark chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then evenly scatter oats, quinoa, almonds, and chia seeds across a baking sheet.
  • Toast in the oven until golden brown, stirring halfway through, for about 15 minutes.
  • Combine peanut butter, honey, and coconut oil in a bowl until fully mixed. Add oat mixture, flaxseed meal, and salt, mixing until thoroughly combined. Press granola mixture into a 12x18-inch baking pan.
  • Once the bars are baked in the preheated oven until set, approximately for 5 minutes, take them out. Sprinkle the bars with chocolate chips and then bake them for another 5 minutes until the chocolate is just melted. Finally, spread the melted chocolate evenly over the bars using a rubber spatula. Enjoy!
  • Chill in the freezer until the chocolate is set, approximately 20 minutes, then slice into bars.
