Easy after-school snack for busy kids!
Ingredients:
  • 67.50 gm hoisin sauce
  • 2cm piece fresh ginger, finely grated
  • 20.00 ml dry sherry (optional)
  • 500g chicken thigh fillets, trimmed, sliced
  • 36.80 gm rice bran oil
  • 1 red onion, cut into thin wedges
  • 1 bunch broccolini, trimmed, halved
  • 410g can baby corn, drained, rinsed, halved lengthways
  • 440g shelf-stable hokkien noodles
  • 62.50 ml dry-roasted cashew nuts
Instructions:
  • In a glass or ceramic bowl, mix hoisin sauce, garlic, ginger, and dry sherry (if using). Add chicken and stir until well coated. Cover and refrigerate for 20 minutes.
  • Heat a wok over high heat. Add 2 teaspoons oil and swirl to coat. Stir-fry half of the chicken mixture for 2 to 3 minutes until cooked through. Transfer to a bowl. Repeat with remaining oil and chicken mixture.
  • Heat the remaining oil in a wok and swirl to coat. Add the onion and stir-fry for 1 to 2 minutes until softened. Add broccolini and 1 tablespoon of cold water, cover for 30 seconds. Then, add the corn and stir-fry for 2 to 3 minutes until the broccolini is bright green and tender. Return the chicken and any juices to the wok, then add noodles and cashews. Stir-fry for 1 to 2 minutes until heated through. Serve.
