Cashew Pork Chow Mein

Quick and delicious pork stir-fry with veggies and cashews, served over noodles for a satisfying Asian-inspired dinner in just 35 minutes!
Ingredients:
  • 1 lb. pork chow mein meat
  • 1 1/2 cups sliced celery
  • 1 cup thinly sliced carrots
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup chopped red or green bell pepper
  • 3/4 cup chicken broth
  • 3/4 cup purchased stir-fry sauce
  • 2 teaspoons sugar
  • 2 tablespoons water
  • 2 teaspoons cornstarch
  • 1 (5-oz.) pkg. uncooked Chinese noodles
  • 1/2 cup salted cashew halves
Instructions:
  • In a large nonstick skillet coated with cooking spray, sauté chow mein meat over medium-high heat until browned, about 5 to 7 minutes, stirring occasionally. Then, add celery, carrots, onion, and bell pepper and cook for an additional 2 minutes, stirring occasionally.
  • Combine the broth, stir-fry sauce, and sugar, then stir well to combine. Cook over medium heat for 8 to 10 minutes until vegetables are crisp-tender, stirring occasionally. In a small bowl, mix water and cornstarch until smooth. Add the mixture to the skillet and cook until thickened, stirring continuously.
  • Cook the noodles according to package instructions until they reach your preferred level of doneness.
  • Plate the pork mixture on top of the noodles and generously sprinkle with cashews for added crunch and flavor.
