Pork and cashew stir-fry recipe for two

Quick and flavorful Asian pork stir fry with a satisfying crunch, ready in under 30 minutes.
Ingredients:
  • 1 long red chilli, seeded, finely chopped
  • 1 clove garlic, crushed
  • 2 tsp white wine vinegar
  • 30.00 ml char siu sauce (see note) or hoisin sauce
  • 2 pork loin steaks, thinly sliced
  • 1/4 Chinese cabbage (wombok)
  • 18.40 gm vegetable oil
  • 100g small green beans, trimmed
  • 60g roasted cashews
  • Coriander, to serve
  • Steamed white rice, to serve
Instructions:
  • Combine chili, garlic, vinegar, sugar, and char siu sauce in a bowl. Mix well. Add pork and toss until coated.
  • Start by trimming the cabbage base, then discard the outer leaves. Proceed by cutting the cabbage into 3cm-thick slices widthwise.
  • Preheat the wok over high heat. Drain pork, saving the marinade. Add 2 teaspoons oil, sear the pork for 30 seconds on each side until golden and nearly cooked. Remove to a plate and clean the wok with a paper towel.
  • In a hot wok, add the 2 teaspoons of oil. Stir-fry beans for 1 minute, then pour in the reserved marinade and bring to a simmer. Toss in cabbage and cook for 2 minutes until tender but still crisp. Add pork, cashews, and stir-fry until heated through. Serve with steamed rice and garnish with coriander leaves.
