Embrace the Japanese tradition of loud noodle slurping for a flavorful experience that's worth the noise.
Ingredients:
  • 450g pkt hokkien noodles
  • 18.20 gm peanut oil
  • 400g pork fillet, thinly sliced
  • 2 brown onions, cut into wedges
  • 2 garlic cloves, thinly sliced
  • 4cm piece ginger, peeled, cut into matchsticks
  • 1 red capsicum, seeded, thinly sliced
  • 1 bunch baby bok choy, cut into wedges
  • 80ml jam
  • 20.00 ml dry sherry
  • 21.00 gm soy sauce
  • 100g toasted cashews
  • 250.00 ml Thai basil leaves
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them sit for 5 minutes to soften, then drain thoroughly.
  • Heat oil in a smoking-hot wok and quickly stir-fry one-quarter of the pork, onion, garlic, and ginger until lightly browned, about 1-2 minutes. Transfer to a bowl and repeat with remaining ingredients in 3 more batches.
  • Combine capsicum in the wok, stir-fry until almost tender. Add pork, noodles, bok choy, chilli jam, sherry, soy sauce, and cashews. Stir-fry until heated through. Remove from heat, add basil, and toss to combine.
  • Scoop the mixture into individual serving bowls and enjoy right away.
