Elevate apple sauce with soy, ginger, and cashews to pair with succulent pork.
Ingredients:
  • 125.00 ml plain flour, seasoned
  • 4 large pork cutlets
  • 18.20 gm olive oil
  • 20g butter
  • 131.25 gm orange juice
  • 10.60 gm soy sauce
  • 16.00 gm brown sugar
  • 1.25 gm ground ginger
  • 2 apples, sliced into rounds
  • 125.00 ml salted cashews
  • Steamed bok choy, to serve
Instructions:
  • Preheat your oven to 180°C. Season the flour, then place it in a plastic bag. Add the cutlets a few at a time, shaking the bag to coat them in flour. Remember to shake off any extra flour.
  • In a heavy-based flameproof casserole dish, heat oil and butter on high heat. Sear cutlets in batches for 3 minutes on each side until golden. Transfer to a plate.
  • Combine juice, soy sauce, sugar, ginger, salt, and pepper in the dish and bring to a boil. Remove from heat and add the cutlets. Top with apples and sprinkle with cashews before serving.
  • Cover and bake for 35 minutes until the flavors meld together perfectly. Uncover and continue to cook for an additional 20 minutes to achieve a crispy, delicious finish. Serve this delectable dish accompanied by bok choy for a delightful meal.
