Tangy and gluten-free fermented cassava couscous, or attieke, adds a zesty twist to savory and spicy dishes.
Ingredients:
  • 0.25 cup minced yellow onion
  • 0.25 cup minced carrot
  • 0.25 cup minced celery
  • 0.25 cup chopped peanuts
  • 2 tablespoons black sesame seeds
  • 1 bay leaf
  • 1 (300 g) box attieke (cassava couscous)
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • In a large skillet over medium-high heat, heat oil. Saute onion, carrot, and celery until fragrant, about 3 to 4 minutes. Add peanuts, sesame seeds, bay leaf, and salt. Stir frequently until vegetables are tender and seeds are toasted. Mix in attieke, stir constantly. Pour water evenly over the pan.
  • Cover the pot and simmer over medium heat until the couscous is tender and heated through, approximately 5 minutes.
  • Uncover the couscous and gently fold it with a spatula using a gentle lifting motion from the bottom upwards to aerate and release excess moisture. Sprinkle with chopped cilantro before serving.
