Cast Iron Pork Chops - The Secret to the Best Pork Chops Is Your Cast Iron Skillet

Succulent cast iron pork chops with simple ingredients. Pair with potatoes and veggies for a complete feast.
Ingredients:
  • 4 (3/4 to 1-inch thick) bone in pork chops, 6 to 8-ounces each
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 2 cloves garlic, thinly sliced
  • 4 sprigs freshrosemary, plus chopped fresh rosemary for garnish
Instructions:
  • Collect all the ingredients. Remove the chops from the refrigerator and allow them to come to room temperature for 30 minutes before cooking.
  • Score the fat cap on the sides of the chops with a few vertical slits to prevent curling during cooking.
  • Pat dry the chops with paper towels, then season both sides generously with salt and pepper.
  • Preheat a 12-inch cast iron skillet over medium-high heat for 3 minutes until hot. Add oil, then add chops and cook for 2 minutes on each side.
  • Melt butter and sauté garlic in the skillet.
  • Top each chop with fragrant rosemary sprigs and gently tip the skillet to gather the luscious melted butter and oil on one side.
  • Baste the chops with the butter and garlic mixture while cooking for 2 minutes. Remove the rosemary, flip the chops, return the rosemary, and continue cooking while basting for another 2 to 3 minutes, or until the chops reach 140°F (60°C) in the center when tested with a thermometer.
  • Transfer the chops from the skillet to a cutting board or serving platter.
  • Cover loosely with foil and allow to rest for 5 minutes before serving. This allows the temperature to increase to 145 degrees F (62 degrees C).
  • Sprinkle with finely chopped fresh rosemary for added flavor and aroma.
