Savor the bold flavors of olives, tomatoes, and rosemary in this perfect cast iron skillet dish.
Ingredients:
  • 1 tablespoon olive oil
  • 2 (3/4 pound) pork tenderloins
  • 2 Roma (plum) tomatoes, seeded and chopped
  • 0.25 cup chopped green olives
  • 0.25 cup dry white wine
  • 1 teaspoon chopped fresh rosemary
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.5 cup heavy cream
Instructions:
  • Preheat your oven to 400°F (200°C) while heating oil in a cast iron skillet over medium-high heat. Brown the pork on all sides in the skillet.
  • Combine tomatoes, olives, wine, rosemary, and garlic in a bowl. Drizzle over the pork and season generously with salt and pepper.
  • Transfer the pork-filled skillet to the oven and bake for 30 minutes until it reaches an internal temperature of at least 145°F (63°C).
  • Take out the pork from the skillet, and keep the tomato mixture and juices. Heat the skillet over medium heat, then slowly add the cream. Stir continuously until it boils. Lower the heat and simmer for 5 minutes until thickened. Slice the pork and top with the creamy sauce before serving.
