Seared pork tenderloin with balsamic plum sauce - a simple yet elegant dish perfect for entertaining.
Ingredients:
  • 1 pork tenderloin
  • salt and ground black pepper to taste
  • 1.5 plums, pitted and chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 2 tablespoons blueberry juice
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and elegantly line a baking sheet with foil.
  • Season the pork tenderloin with salt and pepper. Heat olive oil in a hot skillet until shimmering, then add the tenderloin. Sear each side for about 3 minutes until golden brown. Transfer to a baking sheet.
  • Place the seared tenderloin in the preheated oven and roast until a meat thermometer reads at least 145 degrees F (63 degrees C), approximately 15 minutes. Rest the pork for 10 minutes before slicing into medallions.
  • In a small saucepan, combine plums, balsamic vinegar, brown sugar, honey, and blueberry juice. Cook over medium-low heat, stirring frequently, until plums are soft, around 10 minutes. Blend the mixture until smooth, then return to the saucepan. Simmer for another 5 minutes until thickened like apple butter. Drizzle plum sauce over sliced pork to serve.
