Try this delicious pan-seared pork tenderloin with a versatile blueberry glaze that can also be made with cranberries.
Ingredients:
  • salt to taste
  • 10 black peppercorns, roughly cracked
  • 4 (4 ounce) pork tenderloin chops
  • 2 teaspoons olive oil
  • 0.33333334326744 cup frozen wild blueberries
  • 0.25 cup balsamic vinegar
  • 1 tablespoon white sugar
  • 2 tablespoons water
  • 2 teaspoons cornstarch
Instructions:
  • Season pork generously with salt and cracked pepper. Heat oil in a heavy saucepan over medium-high heat. Sear pork on both sides for about 1 minute each. Lower the heat to medium-low, cover the pan, and cook the pork for 5 minutes. Flip the pork and continue cooking until fully cooked, about 5 to 7 minutes.
  • In a small pot, mix blueberries, balsamic vinegar, and sugar. In a separate bowl, combine water and cornstarch, then add to the pot. Boil the glaze for about 5 minutes until slightly thickened. Simmer on low heat until the pork is ready, about 5 to 7 minutes.
  • Present the pork alongside the flavorful glaze.
