Delicious pork tenderloin with juicy peaches, perfect with rice and veggies.
Ingredients:
  • 3 slices bacon
  • 1 (2 pound) package pork tenderloin
  • 0.25 teaspoon freshly ground black pepper
  • 0.75 teaspoon ground ginger, divided
  • 1.5 cups vertically sliced onion
  • 1.5 teaspoons minced garlic
  • 2 cups peeled and sliced fresh peaches
  • 1 cup low-sodium chicken broth
  • 2 tablespoons frozen orange juice concentrate
  • 1 teaspoon fish sauce
  • 2 tablespoons cornstarch
  • fresh parsley for garnish (optional)
Instructions:
  • In a large skillet over medium-high heat, crisp up the bacon by turning occasionally until evenly browned, for about 10 minutes. Transfer the crispy bacon to paper towels to drain, and keep the flavorful drippings in the skillet.
  • Pat the pork tenderloin dry with paper towels, then generously season both sides with salt, pepper, and a touch of ground ginger.
  • Turn up the heat to medium-high and sear the tenderloin in the delicious bacon drippings until golden and caramelized on all sides, about 5 to 7 minutes. Remove the tenderloin from the skillet, place it on a plate, and keep it cozy and warm.
  • Turn the heat down to medium in the skillet. Add onion slices and cook until they soften and start to caramelize, which should take around 3 to 5 minutes. Next, mix in the garlic and sauté until it becomes aromatic, approximately 1 minute.
  • Sear tenderloin, then add sliced peaches, chicken broth, orange juice concentrate, and the rest of the ground ginger. Let it come to a boil, then return the tenderloin to the skillet. Arrange the peaches over the pork, cover, reduce heat, and simmer for 20-25 minutes until the pork is slightly pink in the center. Ensure it reaches an internal temperature of at least 145°F (63°C).
  • Place the pork and peaches in a visually appealing manner on a serving platter.
  • In a small bowl, whisk together fish sauce, water, and cornstarch until smooth. Increase heat to medium and bring skillet contents to a boil. Pour in cornstarch mixture, stir rapidly until sauce thickens and bubbles, about 5 minutes.
  • Drizzle sauce generously over the succulent pork and sweet peaches. Sprinkle the crumbled bacon on top for a crispy touch. For a hint of freshness, garnish with parsley before serving this delightful dish warm.
