Sweet and tangy pork tenderloin with apple cider, apple cider vinegar, and maple syrup.
Ingredients:
  • 1 (1 pound) pork tenderloin
  • 0.125 teaspoon Cajun seasoning
  • 0.125 teaspoon celery salt
  • 0.125 teaspoon garlic granules
  • 0.125 teaspoon onion powder
  • 1 pinch white sugar
  • 1 tablespoon avocado oil
  • 0.75 cup fresh apple cider
  • 0.25 cup apple cider vinegar
  • 2 tablespoons maple syrup
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  • Prepare the pork tenderloin by removing silver skin and any fat, then pat it dry with paper towels. Combine Cajun seasoning, celery salt, garlic granules, onion powder, and sugar in a small bowl, mix well, and then sprinkle the seasoning over the pork tenderloin.
  • Bring the oil in a large skillet to a shimmering heat over high heat. Sear the pork tenderloin for 3 to 4 minutes on each side. Then, transfer it to the prepared baking sheet and place it in the oven.
  • Roast in the preheated oven for about 15 minutes until the pork is slightly pink in the center. Use an instant-read thermometer to confirm the pork reaches at least 145°F (63°C). Check the temperature after 10 minutes, adjusting for searing time.
  • In a skillet, combine apple cider and apple cider vinegar, and bring to a gentle boil. Stir in any browned bits, reduce heat, and simmer for 15 minutes. Then, stir in maple syrup and continue simmering for an additional 5 minutes.
  • Transfer the pork tenderloin to a fresh cutting board, cover it, and allow it to rest for 10 minutes.
  • Thinly slice the pork tenderloin and arrange on a serving dish. Drizzle with flavorful apple cider au jus.
