Hawaiian-inspired pork tenderloin with apple-pineapple salsa for a healthier twist on a classic favorite.
Ingredients:
  • 1 tablespoon smoked paprika
  • 1 tablespoon packed brown sugar
  • 1/4 cup water
  • 3 tablespoons Dijon mustard
  • 3 tablespoons ketchup
  • 2 tablespoons gluten-free reduced-sodium soy sauce
  • 2 pork tenderloins (about 2 lb total), fat and silver skin removed
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup cider vinegar
  • 24 corn tortillas
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup lime juice
  • 2 apples, unpeeled, finely diced (3 1/2 cups)
  • 2 cups finely diced fresh pineapple
  • 1 cup diced sweet onion
  • 1 bunch fresh cilantro leaves (1 cup)
Instructions:
  • Preheat the oven to 350°F.
  • In a small bowl, whisk together the Sauce Mixture ingredients; set aside.
  • Place pork tenderloins on a plate and massage with 1 tablespoon of oil, salt, and pepper. Heat a 12-inch ovenproof skillet (not nonstick) over medium-high heat until hot. Add the pork and sear for 2 minutes on each side. Sear for an additional 2 minutes on the third side. Pour the sauce over the pork, then transfer to the oven. Bake for 5 minutes, then drizzle vinegar over the pork. Continue baking for 25 to 30 minutes until the pork is tender and easily pulled apart with a fork.
  • Wrap the corn tortillas in foil and place in the oven with the pork during the last 15 minutes of baking to warm them up.
  • In a large bowl, whisk together brown sugar, red pepper flakes, lime juice, and 1 tablespoon of oil until well combined. Add apples, pineapple, and onion, then mix well to coat everything. Set aside for later use.
  • Take the pork skillet out of the oven; using tongs, coat the pork in the sauce in the skillet, cover loosely with foil, and let it rest for 5 minutes. Shred the pork with a fork and mix it with the sauce in the skillet.
  • Fill each taco generously with flavorful pork, spoon over a generous portion of vibrant salsa, and garnish with fresh cilantro leaves.
