Mustard, sherry, ginger, and soy marinade makes this pork tenderloin burst with amazing flavor.
Ingredients:
  • 0.5 cup dry sherry
  • 0.5 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger root, minced
  • 2.5 pounds pork tenderloin
  • 0.125 teaspoon dry mustard powder, or to taste
  • 0.125 teaspoon dried thyme
  • 0.75 cup apple jelly
  • 2 tablespoons dry sherry
Instructions:
  • Prepare the pork marinade by combining sherry, soy sauce, garlic, and ginger in a large glass baking dish.
  • Coat pork with mustard powder and thyme, then place in marinade and ensure pork is fully coated. Refrigerate, covered, for 8 hours to overnight.
  • Preheat the oven to 325 degrees F (165 degrees C. Take the pork out of the refrigerator and remove the cover, keeping the marinade in the dish.
  • Roast in the preheated oven, brushing with the marinade from time to time, until pork is slightly pink in the center, for about 60 to 65 minutes. Ensure the meat reaches an internal temperature of at least 145°F (63°C) when tested with an instant-read thermometer.
  • Once the pork is nearly done, prepare the sauce by warming apple jelly in a saucepan over medium heat. Add sherry and soy sauce, then simmer on low heat until the pork is ready.
  • Thinly slice the pork tenderloin and generously pour warm apple jelly sauce over it before serving.
