Cat-face chocolate palmiers

Delightful chocolate cat faces on crispy pastry that will make everyone smile.
Ingredients:
  • Vegetable oil, to grease
  • 115g (1/2 cup) caster sugar
  • 70g dark chocolate, finely grated
  • 2 sheets (25 x 25cm) ready-rolled frozen puff pastry (Pampas brand), just thawed
  • 30g dark chocolate, extra, melted
Instructions:
  • Preheat your oven to 200°C, then lightly grease a baking tray with vegetable oil.
  • Sprinkle half of the sugar and chocolate evenly over a pastry sheet. Roll both ends of the pastry towards the center to form a double log. Repeat with the remaining sugar, chocolate, and pastry sheet. Cut each roll into 8 slices. Place each slice, cut-side down, on the baking tray. Shape each slice into a cat head with ears. Chill in the fridge for 15 minutes.
  • Bake in a hot oven until pastry is puffed and golden brown, then cool on a wire rack.
  • Transfer the melted chocolate into a plastic bag and use it to pipe chocolate noses and whiskers on each palmier.
