Cauliflower, cheese and garlic flat bread

Delicious cheesy cauliflower flatbreads, perfect for a warm treat or a satisfying lunchbox snack!
Ingredients:
  • 2 eggs
  • 275g cauliflower florets
  • 100g mozzarella, grated
  • 3 garlic cloves, crushed
  • 30.00 ml finely chopped flat-leaf parsley
Instructions:
  • Process the cauliflower into rice-sized pieces in batches, then transfer to a microwave-safe bowl. Cover and microwave on high for 7 minutes, or until tender. Allow to cool slightly before using.
  • Preheat your oven to 220C (200C fan forced) and line a large baking tray with baking paper.
  • In a large bowl, mix together eggs, mozzarella, garlic, and parsley. Add cauliflower, season, and stir well. Spoon the mixture onto a prepared tray and shape it into a 17cm x 28cm rectangle using a spatula to line the edges. Bake for 25 minutes or until golden brown.
  • Transfer the prepared dish to a cutting board, allowing it to stand for 5 minutes. Cut it in half lengthwise, then slice each half into 4 triangles. Serve the dish warm or at room temperature.
