Cauliflower, garlic and melted cheese breadsticks

Delight guests with cheesy cauliflower breadsticks.
Ingredients:
  • 275g cauliflower florets
  • 150g mozzarella, grated
  • 3 garlic cloves, crushed
  • 30.00 ml finely chopped flat-leaf parsley
Instructions:
  • Pulse cauliflower in batches until rice-sized. Transfer to a microwave-safe bowl, cover, and microwave on high for 7 minutes, or until tender. Allow to cool slightly before serving.
  • Preheat your oven to 220C/200C fan forced and line a large baking tray with baking paper.
  • In a large bowl, mix together eggs, 100g mozzarella, garlic, and parsley. Add cauliflower, season, and stir well. Spoon the mixture onto a prepared tray, shaping it into a 17cm x 28cm rectangle. Use a spatula to define the edges. Bake for 25 minutes until golden. Sprinkle the remaining mozzarella on top and bake for an additional 3-5 minutes until cheese is melted and golden.
  • Let the mixture rest for 5 minutes on a cutting board before slicing it in half lengthwise and then into small rectangles. Serve the delicious dish warm.
