Transform classic mac and cheese with cauliflower for a tasty twist. Our savory impostor mac and cheese with caramelized onions will be a hit with your family.
Ingredients:
  • 6 cups small cauliflower florets
  • 3 tablespoons non-hydrogenated margarine, divided
  • 0.33333334326744 cup flour
  • 2 teaspoons dry mustard
  • 2.5 cups milk
  • 1.5 cups CRACKER BARREL Shredded Double Cheddar Cheese, divided
  • 0.33333334326744 cup KRAFT 100% Parmesan Aged Grated Cheese, divided
  • 0.5 cup panko bread crumbs
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Boil cauliflower in a large saucepan for 4 minutes. Drain thoroughly.
  • In a large saucepan over medium heat, melt 2 tablespoons of margarine. Sauté the onions for 3 minutes until crisp-tender. Sprinkle in flour and mustard, cook for 1 minute while stirring. Slowly pour in milk, cook for 5 minutes until thickened, stirring frequently. Take off the heat and mix in 1 1/4 cups Cheddar and 3 tablespoons Parmesan until the Cheddar melts. Add cauliflower and stir to coat evenly. Transfer the mixture to a 2.5-liter casserole dish coated with cooking spray.
  • In a medium microwaveable bowl, melt the remaining margarine for 30 seconds or until completely melted. Mix in the bread crumbs and the rest of the Parmesan. Sprinkle this mixture over the cauliflower.
  • Bake for 20-25 minutes until heated through, then sprinkle remaining Cheddar on top for the final 5 minutes of baking.
