Baked cauliflower mac and cheese with crispy panko topping.
Ingredients:
  • Cooking spray
  • 1.5 cups bite-size cauliflower florets
  • 1 (6 ounce) box Horizon® ClassicMac™ Pasta Shells & White Cheddar Cheese
  • 4 tablespoons unsalted butter, divided
  • 0.5 cup reduced fat milk
  • 2 ounces cream cheese, at room temperature
  • 0.33333334326744 cup shredded sharp white Cheddar cheese
  • 0.66666668653488 cup panko bread crumbs
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously coat a ceramic or glass baking dish with cooking spray.
  • 1. Bring a pot of water to a boil, then add cauliflower florets and cook for one minute. Remove using a slotted spoon.
  • Prepare pasta shells according to the Horizon package instructions. Once cooked, increase the milk amount to 1/2 cup, then stir in 2 tablespoons of butter and the cheese powder packet.
  • Blend the cream cheese and Cheddar until melted and well combined. Fold in the cauliflower and season with salt and pepper to taste.
  • Transfer the creamy macaroni and cheese into the baking dish, ensuring a perfectly even surface.
  • Melt 2 tablespoons of butter until golden and fragrant. Combine panko breadcrumbs with the butter, salt, and pepper for a crunchy topping on the macaroni and cheese.
  • Bake until the breadcrumbs are beautifully golden brown, about 15-17 minutes.
